Beers - Les Essards Charles who shares his passion for his profession with us What attracted you to beer making? I am the son of a farmer, I have an agricultural background, but I wanted to create something, to do some processing to get to the end of the product. I took over 15 ha on the family farm and I started at the end of 2016! I chose to make my own malt - I think I'm the only one in the area - which means I grow my own barley, harvest it, mash it, germinate it and roast it - and I add very few hops (essential for preservation). And looking back? Still as enthusiastic as ever! Especially as the feedback from customers is very encouraging, they appreciate the cereal notes, the consistency of taste and the organic aspect. I've also worked on the packaging so that it reflects my products and makes people want to eat them. I'm sometimes asked if I'm going to create new recipes; I think about it, but it would be at the expense of an existing recipe. It's an activity that requires rigour and I'm on my own.
